Born in 2019, MI.O is the first panettone created by Daniel Canzian, offering a unique fragrance on the palate thanks to a dough enriched with his roasted orange paste — prepared in the restaurant’s kitchen — and featuring a very low sugar content.
Soft like a pandoro, MI.O embodies the philosophy of DanielCanzian Ristorante: essential, purely classic, and capable of expressing the best of Italy from North to South, bringing together in a single recipe the citrus aromas of the Mediterranean and the Milanese Christmas tradition.
Ingredients
wheat flour, sultanas, egg yolk, butter, candied orange paste (glucose-fructose syrup,
orange, sugar, flavourings), cane sugar, sourdough (wheat flour), roasted orange paste (oranges, sugar, pectin, oil
almonds), emulsifiers: mono and di-glycerides of fatty acids, sunflower lecithin; invert sugar syrup, barley malt, salt,
cocoa butter, milk, vanilla bean powder. May contains traces of soy and nuts.

Naturally leavened baked confectionery product, based on a recipe by Daniel Canzian and produced by Albertengo Panettoni, an Italian company active since the early 1900s.
Production process (approx. 48 hours, from the starter to packaging):
Preparation of the natural yeast (from sourdough starter).
Leavened dough stages: first dough → resting and rising → second dough → further rising until fully matured.
Shaping: dividing and placing the dough into baking molds.
Final proofing.
Baking.
Cooling with the product turned upside down.
