Born in 2019 from the collaboration with Albertengo, "MIO" is Daniel Canzian's Panettone that gives the palate a unique fragrance thanks to the presence of roasted orange paste in the dough. As soft as a pandoro, MIO panettone incorporates an ingredient that comes directly from the kitchens of DanielCanzian Ristorante such as roasted orange paste and fully represents its philosophy: it is essential, purely classic and capable of telling the good of Italy from North to South, combining the citrus scent of the Mediterranean and the Milanese Christmas tradition in a single recipe.
Ingredients
wheat flour, sultanas, egg yolk, butter, candied orange paste (glucose-fructose syrup,
orange, sugar, flavourings), cane sugar, sourdough (wheat flour), roasted orange paste (oranges, sugar, pectin, oil
almonds), emulsifiers: mono and di-glycerides of fatty acids, sunflower lecithin; invert sugar syrup, barley malt, salt,
cocoa butter, milk, vanilla bean powder. May contains traces of soy and nuts.

Panettone MIO is produced by Albertengo Panettoni Spa – Via Cardè a/A 12030, Torre San Giorgio (CN).
Production process: from the preparation of the sourdough (starting from the mother), to the packaging of the finished product, it lasts 48 hours. The preparation steps can be summarized as follows: 1. Preparation of sourdough (starting from sourdough)
2. Processing of leavened doughs (first kneading, leavening stop, second kneading and more leavening stop until the leavened dough is obtained);
3. Shaping phase, i.e. placing the dough in the baking moulds;
4. Final leavening of the dough;
5. Cooking;
6. Cooling by flipping the product.
