"Luna Storta" is obtained by drying selected grapes from the Montello hills on racks to reach the right sugar concentration. Once harvested, the bunches are left to rest on racks, as was the custom in the past, and checked periodically. The drying period of the grapes can last until January. After crushing, fermentation is very slow and long due to the high sugar concentration of the must obtained
