Two thousand hens owned by Massimiliano Rapella roam freely in the woods of Morbegno, and their forest eggs are among the essential ingredients at DanielCanzian Ristorante. Collected by hand every day from the tree stumps where they are laid, Rapella’s eggs are organically certified and leave no trace on the environment, since they are not shipped but delivered within 24 hours of being laid.
