Massimiliano Rapella's 2,000 hens roam free in the woods of Morbegno, whose wild eggs are among the ingredients featured at DanielCanzian Ristorante. Harvested by hand every day from the stumps in which they are laid, Rapella's eggs are certified organic and leave no trace in the environment since they are not shipped, but only delivered within 24 hours of their laying.
