A dish from the lagoon tradition, prepared according to the classic recipe. The spider crab meat, worked by hand, is seasoned with extra virgin olive oil, lemon juice and a light grind of black pepper to enhance its delicate flavour.
Perfect to enjoy cold, it makes an ideal starter, served in its shell and paired with a glass of Ancestrale Due Valli, the chef's own prosecco — fresh and mineral.
